Organic Extra Virgin Olive Oil
Olive Culture
The olives which comprise our olive oil are collected manually with small hand-held rakes. If weather conditions cause delays in early harvesting, battery-powered rakes might be used by workers in November. Our olive groves are characterized by:
- Hilly calcareous soil, where stones are mixed with red-brown dirt;
- Altitude 350-650 meters (1150-2130 feet) above sea level;
- Main cultivars (cultivated varieties) : “Moraiolo” (>80%), Frantoio, Leccino; seldom presence of other pollinators (mainly Pendolino and Maurino varieties);
- Direct farming conduction;
- Olive trees raised with polyconic-vase shape through exclusively manual trimming;
- 100% Organic Farming;
- Natural earthen nutrition through parsimonious animal-manure fertilizing and green manure.
Oil extraction and storage
- Cold extraction at 68-77 ℉ through continuous-cycle process, respecting organic and PDO (Protected Designation of Origin) production discipline;
- Natural decantation of the oil and later oil filtering;
- Temporary storage (before bottling) in inox steel tanks under a layer of argon natural gas, to best prevent oxidation.
